Resumen: Transparency in the food sector and especially toward consumers is one of the priority issues on the agenda of consumer policy representatives. Food scandals and deficiencies in consumer communication have raised consumers' requests for information. The requests for improved transparency are also due to the increasing interests of consumers for food policies that ensure that food is not only safe and of the quality they expect, but that matches evolving expectations that food production is based on processes that limit negative impacts on the environment and consider social concerns.
